Coconut Dal

Ingredients
- Servings: 4
- 2 cups yellow split peas
- 1 (14 ounce) can light coconut milk
- 4 cups low sodium vegetable broth
- 1 small yellow onion, slices
- 3 garlic cloves, pressed
- 1 tablespoon fresh ginger
- 2 teaspoons turmeric
- 1 teaspoon salt
- 4 tablespoons cilantro, for garnish
Recipe
- 1 combine all ingredients except for cilantro in saucepan and bring to a boil.
- 2 simmer uncovered about 30 minutes, or until peas are tender and it begins to thicken.
- 3 serve over brown rice and garnish with cilantro.
