Dawns Leek And Potato Soup

Ingredients
- Servings: 6
- 3 leeks
- 1 lb chopped potato
- 1 onion
- 1 pint vegetable stock
- 1/2 cup water
- seasoning
- 3 tablespoons cream (optional)
Recipe
- 1 clean and chop the leeks into 1/4 inch pieces.
- 2 place chopped onions and leeks into a large pan with water and and steam for 5 minutes.
- 3 add the stock and chopped potato bring to boil and then simmer for 1/2 hour.
- 4 season to taste.
- 5 can be served liquidised or chunky
- 6 add cream if using it , and serve.
