Cheesy Corn Fritters

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 ears corn, cooked (or 1 cup canned or frozen corn)
  • 1/4 cup cornmeal
  • 1/4 cup whole wheat flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking soda
  • 3/4 cup cheese, shredded
  • 2 green onions, chopped
  • 1 egg
  • 1/4 cup milk
  • 1 tablespoon oil

Recipe

  • 1 carefully lice corn kernels from the cobs and set aside.
  • 2 then, in a med bowl, whisk together cornmeal, flour, salt and baking soda.
  • 3 add cheddar cheese and stir, then mix in corn and green onions.
  • 4 in a separate small bowl, combine egg and milk and whisk until frothy.
  • 5 add to corn mixture and combine well.
  • 6 heat oil in a large frying pan over med heat.
  • 7 to form patties, scoop 1/4 of batter at a time and place in hot pan.
  • 8 flatten patties slightly with the back of spatula.
  • 9 fry 5-6 minutes, turning half way through, until patties are golden brown on each side.
