Chicken Curry

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 1 tablespoon all-purpose flour
  • 1 tablespoon curry powder
  • 1/2 cup chicken stock
  • 1/2 light coconut milk
  • 2 cups cooked chicken, cubed
  • salt and pepper

Recipe

  • 1 in a skillet, heat oil over medium heat.
  • 2 add onion and cook, stirring until softened, about 3 minutes.
  • 3 add flour and curry powder and cook, stirring about 1 minute.
  • 4 add chicken stock, coconut milk and cook, stirring, until thickened, about 2 minutes.
  • 5 add cooked chicken. cover and simmer until chicken is heated through, about 5 minutes.
  • 6 season with salt and pepper to taste.
  • 7 serve over hot rice or warm naan bread.
