Banana And Honey On-the-go Bread

Ingredients
- cooking spray
- 3 bananas, medium ripe
- 1/2 cup margarine
- 1/2 cup honey
- 2 eggs
- 2 tablespoons milk
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup walnut pieces, chopped
Recipe
- 1 preheat the oven to 350 degrees. spray the loaf pan with vegetable oil cooking spray.
- 2 peel the bananas. break into 1-inch pieces and place in the small bowl.
- 3 in a medium bowl cream the margarine by pressing it against the sides of the bowl with a wooden spoon until it is light and fluffy.
- 4 add the honey to the creamed margarine and continue beating for 50 strokes until the honey dissolves into the margarine.
- 5 add the eggs and milk to the margarine mixture and stir until well blended.
- 6 in another medium bowl, mix the flours, baking powder, salt and baking soda until well blended. set aside.
- 7 to prepare the batter, add some of the bananas, then some of the flour mixture to the margarine mixture. beat until smooth.
- 8 repeat step 7 until all the banana and flour mixture are well mixed with the margarine mixture.
- 9 stir in the walnut pieces.
- 10 pour the batter into the prepared pan and bake for 45 minutes.
- 11 check the bread with a toothpick. if it comes out clean, the bread is done. if not, bake 5 more minutes.
- 12 place on a wire rack to cool for 10 minutes.
- 13 remove from pan by turning upside down over wire rack. cool completely before serving.
