Chicken Curry

Ingredients

- 1 tablespoon vegetable oil
- 1 onion, diced
- 1 tablespoon all-purpose flour
- 1 tablespoon curry powder
- 1/2 cup chicken stock
- 1/2 light coconut milk
- 2 cups cooked chicken, cubed
- salt and pepper
Recipe
- 1 in a skillet, heat oil over medium heat.
- 2 add onion and cook, stirring until softened, about 3 minutes.
- 3 add flour and curry powder and cook, stirring about 1 minute.
- 4 add chicken stock, coconut milk and cook, stirring, until thickened, about 2 minutes.
- 5 add cooked chicken. cover and simmer until chicken is heated through, about 5 minutes.
- 6 season with salt and pepper to taste.
- 7 serve over hot rice or warm naan bread.
