Banana And Honey On-the-go Bread

Total Time: 1 hr 10 mins Preparation Time: 25 mins Cook Time: 45 mins

Ingredients

  • cooking spray
  • 3 bananas, medium ripe
  • 1/2 cup margarine
  • 1/2 cup honey
  • 2 eggs
  • 2 tablespoons milk
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup walnut pieces, chopped

Recipe

  • 1 preheat the oven to 350 degrees. spray the loaf pan with vegetable oil cooking spray.
  • 2 peel the bananas. break into 1-inch pieces and place in the small bowl.
  • 3 in a medium bowl cream the margarine by pressing it against the sides of the bowl with a wooden spoon until it is light and fluffy.
  • 4 add the honey to the creamed margarine and continue beating for 50 strokes until the honey dissolves into the margarine.
  • 5 add the eggs and milk to the margarine mixture and stir until well blended.
  • 6 in another medium bowl, mix the flours, baking powder, salt and baking soda until well blended. set aside.
  • 7 to prepare the batter, add some of the bananas, then some of the flour mixture to the margarine mixture. beat until smooth.
  • 8 repeat step 7 until all the banana and flour mixture are well mixed with the margarine mixture.
  • 9 stir in the walnut pieces.
  • 10 pour the batter into the prepared pan and bake for 45 minutes.
  • 11 check the bread with a toothpick. if it comes out clean, the bread is done. if not, bake 5 more minutes.
  • 12 place on a wire rack to cool for 10 minutes.
  • 13 remove from pan by turning upside down over wire rack. cool completely before serving.
