Caribbean Roast Chicken

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 2 limes
  • 1 orange
  • 2 tablespoons brown sugar
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon thyme
  • 1/4 teaspoon red pepper
  • 1/4 teaspoon allspice
  • 2 garlic cloves, minced
  • 2 onions, cut in wedges
  • 1 (16 ounce) can pineapple chunks
  • 1/4 cup fresh cilantro
  • 3 -4 lbs chicken, cut into 8 pieces

Recipe

  • 1 preheat oven to 450.
  • 2 grate zest of limes and orange.
  • 3 juice lime and orange and combine in large bowl with zest.
  • 4 mix in brown sugar, oil, salt, thyme, red pepper, allspice and garlic.
  • 5 toss in onions (and green peppers if you have them) as well as pineapple chunks and juice and finely the chicken.
  • 6 can marinate all day or place in large casserole dish and bake 35-40 minutes.
  • 7 toss 15 minutes into baking.
  • 8 before serving sprinkle with cilantro.
