Cheese And Corn Tortillas

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 (16 ounce) carton low fat cottage cheese
  • 1 cup canned kernel corn
  • 3/4 cup shredded reduced-fat sharp cheddar cheese, divided
  • 1/4 cup sliced green onion
  • 2 tablespoons chopped fresh cilantro
  • 1/4 teaspoon mexican seasoning
  • 6 6-inch flour tortillas
  • 1/2 cup salsa

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 grease 13 x 9 pan.
  • 3 mix cottage cheese, corn, 1/4 cup cheddar, onion, cilantro and seasoning.
  • 4 spoon about 1/2 cup cheese mixture down center of each tortilla.
  • 5 roll up.
  • 6 arrange seam side down in prepared pan.
  • 7 top with salsa and remaining cheese.
  • 8 bake 30 minutes.
