Cider-roasted Squash

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • 1 butternut squash (peeled and cubed)
  • 1 medium onion, cut into thin wedges
  • 2 tablespoons apple cider
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons brown sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon ground nutmeg

Recipe

  • 1 preheat oven to 425.
  • 2 place the squash and onion in a greased 9 * 13 baking dish.
  • 3 combine remaining ingredients: pour over squash mixture.
  • 4 cover and bake at 425* for 35 minutes or until tender, stirring every 10 minutes.
