Cider-roasted Squash

Ingredients
- 1 butternut squash (peeled and cubed)
- 1 medium onion, cut into thin wedges
- 2 tablespoons apple cider
- 1 tablespoon olive oil
- 1 1/2 teaspoons brown sugar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon ground nutmeg
Recipe
- 1 preheat oven to 425.
- 2 place the squash and onion in a greased 9 * 13 baking dish.
- 3 combine remaining ingredients: pour over squash mixture.
- 4 cover and bake at 425* for 35 minutes or until tender, stirring every 10 minutes.
