Colonel Sanders’ Carrot Almond Ring

Ingredients

- 3/4 cup almonds, blanched
- 1 tablespoon butter
- 1 lb peeled carrot, grated
- 3/4 cup beaten egg
- 1 1/2 cups milk
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon finely grated onion
Recipe
- 1 saute almonds in butter until golden.
- 2 coarsely chop almonds.
- 3 grate or shred carrots.
- 4 cook carrots in boiling water until tender.
- 5 drain carrots and place in a baking ring.
- 6 beat the eggs slightly, then add all of the other ingredients.
- 7 mix well and pour evenly over the carrots.
- 8 place baking ring in a pan of water.
- 9 bake 35-40 minutes at 325 f degrees, until firm.
- 10 serve.
