Curried Beef And Cauliflower

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 -4 garlic cloves, minced
  • 1 green pepper, chopped
  • 1 teaspoon cumin seed
  • 1 1/2 lbs beef stew meat
  • 1 tablespoon flour
  • 1 (15 ounce) can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef stock
  • 1 head cauliflower, divided into florets
  • 1 1/2 tablespoons ground cumin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped

Recipe

  • 1 over moderate heat, cook beef stew for about five minutes to brown. add flour and stir to cover meat evenly. set aside.
  • 2 in a large pan or wok, saute onion, garlic, green pepper, and cumin seed in olive oil over moderate heat, about 5 minutes.
  • 3 reduce heat to low. add diced tomatoes, tomato paste, beef stock, caulifower florets, cumin, ginger, turmeric, and black pepper. cover and simmer 30-40 minutes, or until cauliflower is tender.
  • 4 add cilantro. stir well. serve with rice or couscous.
