Dari's Heavenly Prune Cake

Ingredients
- 3 eggs, lightly beaten
- 2 cups vegetable oil
- 1 cup buttermilk
- 2 cups sugar
- 2 cups self-rising flour
- 1 teaspoon vanilla
- 1 teaspoon nutmeg
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- 1 cup prune, cooked, pitted, cut into small pieces
- 1 cup pecans, chopped
Recipe
- 1 preheat oven to 325 degrees.
- 2 grease and flour two 8-inch round cake pans or one 13x9x2 cake pan, set aside.
- 3 combine all ingredients in the order listed except prunes and pecans. stir until smooth by hand approximately 75 strokes. if using a mixer, blend on medium speed about 2 minutes.
- 4 stir in prunes and chopped pecans.
- 5 pour batter into prepared pans and bake in oven approximately 45 minutes or until a knife inserted through center come out clean.
