Dari's Heavenly Prune Cake

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • 3 eggs, lightly beaten
  • 2 cups vegetable oil
  • 1 cup buttermilk
  • 2 cups sugar
  • 2 cups self-rising flour
  • 1 teaspoon vanilla
  • 1 teaspoon nutmeg
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1 cup prune, cooked, pitted, cut into small pieces
  • 1 cup pecans, chopped

Recipe

  • 1 preheat oven to 325 degrees.
  • 2 grease and flour two 8-inch round cake pans or one 13x9x2 cake pan, set aside.
  • 3 combine all ingredients in the order listed except prunes and pecans. stir until smooth by hand approximately 75 strokes. if using a mixer, blend on medium speed about 2 minutes.
  • 4 stir in prunes and chopped pecans.
  • 5 pour batter into prepared pans and bake in oven approximately 45 minutes or until a knife inserted through center come out clean.
