Baked Couscous With Tomatoes

Ingredients

- 1 tablespoon olive oil
- 1/2 cup minced onion
- 2 cups uncooked couscous
- 1 (14 1/2 ounce) can diced tomatoes, drained
- 3 cups vegetable broth
- 1 teaspoon kosher salt
- 1/4 teaspoon fresh ground pepper
- 1/2 teaspoon ground coriander
Recipe
- 1 preheat the oven to 375 degrees.
- 2 heat the oil in a saute pan.
- 3 saute the onions in oil about 5 minutes, until they are soft and golden.
- 4 in a bowl, combine the onions and the remaining ingredients.
- 5 transfer the mixture into a 2-quart casserole.
- 6 bake for 20 minutes.
