Bourbon Braised Lamb Chops

Ingredients
- Servings: 4
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 lamb chops, 1 inch thick
- 1 tablespoon vegetable oil
- 4 orange slices
- 2 tablespoons brown sugar
- 2 tablespoons cornstarch
- 1/8 teaspoon ground allspice
- 1 cup water
- 1/4 cup orange juice
- 2 tablespoons bourbon
- 1/4 cup raisins
Recipe
- 1 combine flour,salt and pepper,dredge chops in flour mixture.
- 2 brown on both sides in oil in a large skillet.
- 3 place an orange slice on each chop.
- 4 combine brown sugar,cornstarch and allspice in a small saucepan,gradually stir in water.
- 5 cook over medium heat,stirring constantly,until mixture thickens and comes to a boil.
- 6 cook 1 minute,stirring constantly.
- 7 remove from heat,stir in orange juice,bourbon and rasins.
- 8 spoon over lamb chops.
- 9 cover,reduce heat and simmer 1 hour or until lamb chops are tender,stirring occasionally.
