Bourbon Braised Lamb Chops

Total Time: 1 hr 30 mins Preparation Time: 20 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 4
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 lamb chops, 1 inch thick
  • 1 tablespoon vegetable oil
  • 4 orange slices
  • 2 tablespoons brown sugar
  • 2 tablespoons cornstarch
  • 1/8 teaspoon ground allspice
  • 1 cup water
  • 1/4 cup orange juice
  • 2 tablespoons bourbon
  • 1/4 cup raisins

Recipe

  • 1 combine flour,salt and pepper,dredge chops in flour mixture.
  • 2 brown on both sides in oil in a large skillet.
  • 3 place an orange slice on each chop.
  • 4 combine brown sugar,cornstarch and allspice in a small saucepan,gradually stir in water.
  • 5 cook over medium heat,stirring constantly,until mixture thickens and comes to a boil.
  • 6 cook 1 minute,stirring constantly.
  • 7 remove from heat,stir in orange juice,bourbon and rasins.
  • 8 spoon over lamb chops.
  • 9 cover,reduce heat and simmer 1 hour or until lamb chops are tender,stirring occasionally.
