Bourbon Zucchini Crisps

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 3 medium zucchini, cut into 1/8 inch slices
  • 3/4 cup bourbon
  • 1 teaspoon salt
  • 2/3 cup flour
  • 1/2 teaspoon pepper
  • 1/2 cup vegetable oil
  • 1/4 teaspoon tarragon

Recipe

  • 1 combine zucchini and bourbon in a bowl and cover.
  • 2 marinate in the refrigerator for 24 hours,turning several times.
  • 3 combine flour,salt and pepper.
  • 4 dredge the zucchini in the mixture.
  • 5 fry,in batches,in oil,until golden.
  • 6 add more oil if needed.
  • 7 drain on paper towels.
  • 8 sprinkle with tarragon before serving.
