Bourbon Zucchini Crisps

Ingredients
- 3 medium zucchini, cut into 1/8 inch slices
- 3/4 cup bourbon
- 1 teaspoon salt
- 2/3 cup flour
- 1/2 teaspoon pepper
- 1/2 cup vegetable oil
- 1/4 teaspoon tarragon
Recipe
- 1 combine zucchini and bourbon in a bowl and cover.
- 2 marinate in the refrigerator for 24 hours,turning several times.
- 3 combine flour,salt and pepper.
- 4 dredge the zucchini in the mixture.
- 5 fry,in batches,in oil,until golden.
- 6 add more oil if needed.
- 7 drain on paper towels.
- 8 sprinkle with tarragon before serving.
