Chicken Chili

Ingredients

- 2 teaspoons vegetable oil
- 3/4 cup finely chopped onion
- 4 boneless chicken breasts, cut into bite-sized pieces
- 2 garlic cloves, chopped
- 1 1/2 cups finely chopped carrots
- 3/4 cup finely chopped red bell pepper
- 3/4 cup thinly sliced celery
- 1/4 cup canned diced green chiles
- 3/4 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 (16 ounce) can cannellini beans or 1 (16 ounce) can other beans, rinsed and drained
- 1 (14 1/2 ounce) can reduced-sodium fat-free chicken broth
- 3 tablespoons pesto sauce
Recipe
- 1 heat oil in a dutch oven over medium-high heat.
- 2 add onion and chicken; sauté 5 minutes.
- 3 add carrot, bell pepper, and celery; sauté 4 minutes,add garlic.
- 4 add chiles and the next 6 ingredients then broth. bring to a boil. cover, reduce heat, and simmer 25 minutes.
- 5 stir in classic pesto.
