Creamy Basque Shrimp Scampi

Ingredients

- 1 lb shrimp, peeled and deveined
- 1/2 cup flour
- salt and pepper
- 1/4 cup vegetable oil
- 1 cup wine
- 1/2 cup butter
- 1 lemon, juice of
- 1/4 heavy cream
- 2 tablespoons fresh parsley, chopped
Recipe
- 1 season the shrimp with salt and pepper, then dust with flour.
- 2 heat the oil in a large heavy skillet. add shrimp and cook over medium heat about 2 minutes per side.
- 3 remove shrimp from pan and drain the oil from pan.
- 4 in the same skillet, warm the wine over low heat. add shrimp and cook for 1 minute.
- 5 add butter, lemon juice, and heavy cream. cook 1 or two minutes more.
- 6 sprinkle with parsley.
