Creamy Basque Shrimp Scampi

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb shrimp, peeled and deveined
  • 1/2 cup flour
  • salt and pepper
  • 1/4 cup vegetable oil
  • 1 cup wine
  • 1/2 cup butter
  • 1 lemon, juice of
  • 1/4 heavy cream
  • 2 tablespoons fresh parsley, chopped

Recipe

  • 1 season the shrimp with salt and pepper, then dust with flour.
  • 2 heat the oil in a large heavy skillet. add shrimp and cook over medium heat about 2 minutes per side.
  • 3 remove shrimp from pan and drain the oil from pan.
  • 4 in the same skillet, warm the wine over low heat. add shrimp and cook for 1 minute.
  • 5 add butter, lemon juice, and heavy cream. cook 1 or two minutes more.
  • 6 sprinkle with parsley.
