Dad's Summertime Vegetable Salad

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 10
  • 24 ounces low fat cottage cheese (large curd)
  • 4 tablespoons low-fat sour cream (*)
  • 2 medium cucumbers (seeded, large dice) or 1 large cucumber (seeded, large dice)
  • 3 green onions, small dice ( and green parts)
  • 2 beefsteak tomatoes, seeded, large dice
  • 1/2 red pepper, seeded, large dice
  • 1/2 yellow pepper, seeded, large dice
  • 1/2 orange bell pepper, seeded, large dice
  • 4 red radishes, medium to large size, thinly sliced
  • 1 carrot, large, scrubbed and shredded
  • 10 pitted black olives, large, halved
  • 1 cup frozen peas, defrosted
  • 1/2 red onion, small dice
  • 2 teaspoons garlic powder
  • 1/4 teaspoon sea salt
  • fresh ground pepper (to taste)
  • fresh parsley, chopped

Recipe

  • 1 *may add more for lighter consistency.
  • 2 * can use plain yogurt but taste will be different.
  • 3 combine everything but parsley, gently, in large bowl.
  • 4 chill 1/2 hours.
  • 5 serve with topping of parsley.
