Cottage Cheese, Chicken & Tomato Salad

Ingredients

  • Servings: 1
  • 1 cup mesclun or 1 cup other lettuce, enough to cover your plate,cleaned
  • 1/2 cup cooked chicken
  • 1 medium tomato, cut into 8 wedges
  • 1/2 cup sweet onion, chopped
  • 1/4 cup daikon radish, chopped (chinese radish)
  • 1/4 cup cucumber, peeled & chopped
  • 1/4 cup celery, chopped
  • 1/2 cup low fat cottage cheese or 1/2 cup 2% large-curd cottage cheese
  • crouton (optional)
  • salad dressing, of your choice (optional)

Recipe

  • 1 place a layer of lettuce on your plate.
  • 2 spread on the chicken and then layer the other ingredients.
  • 3 top with cottage cheese.
  • 4 sprinkle with croutons& dressing if using.
