Cottage Cheese, Chicken & Tomato Salad

Ingredients

- 1 cup mesclun or 1 cup other lettuce, enough to cover your plate,cleaned
- 1/2 cup cooked chicken
- 1 medium tomato, cut into 8 wedges
- 1/2 cup sweet onion, chopped
- 1/4 cup daikon radish, chopped (chinese radish)
- 1/4 cup cucumber, peeled & chopped
- 1/4 cup celery, chopped
- 1/2 cup low fat cottage cheese or 1/2 cup 2% large-curd cottage cheese
- crouton (optional)
- salad dressing, of your choice (optional)
Recipe
- 1 place a layer of lettuce on your plate.
- 2 spread on the chicken and then layer the other ingredients.
- 3 top with cottage cheese.
- 4 sprinkle with croutons& dressing if using.
