Creamed Spinach

Ingredients
- Servings: 4
- 2 tablespoons butter
- 1/4 cup onion, minced
- 2 tablespoons flour
- 1 1/2 cups half-and-half
- 1 1/2 lbs baby spinach, rinsed
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/8 teaspoon nutmeg
- 1/2 tablespoon butter
Recipe
- 1 melt butter over medium heat.
- 2 add onions and cook until soft.
- 3 add the flour, stir until golden brown.
- 4 add the half and half.
- 5 simmer until sauce has thickened enough to coat the back of a spoon.
- 6 add the spinach in two parts, covered, each for four minutes.
- 7 stir until wilted.
- 8 add salt, pepper, and nutmeg.
- 9 use a stick blender to lightly puree.
- 10 dot with remaining butter.
