Creamed Spinach

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter
  • 1/4 cup onion, minced
  • 2 tablespoons flour
  • 1 1/2 cups half-and-half
  • 1 1/2 lbs baby spinach, rinsed
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon nutmeg
  • 1/2 tablespoon butter

Recipe

  • 1 melt butter over medium heat.
  • 2 add onions and cook until soft.
  • 3 add the flour, stir until golden brown.
  • 4 add the half and half.
  • 5 simmer until sauce has thickened enough to coat the back of a spoon.
  • 6 add the spinach in two parts, covered, each for four minutes.
  • 7 stir until wilted.
  • 8 add salt, pepper, and nutmeg.
  • 9 use a stick blender to lightly puree.
  • 10 dot with remaining butter.
