Cheap Gfcf Nachos

Ingredients
- 1 red bell peppers (whatever you're in the mood for) or 1 hot pepper (whatever you're in the mood for)
- 1/2 onion
- 1 large tomato
- 1 cup black beans, dry
- 1 cup pinto beans, dry
- 1 (32 ounce) bag corn chips
- 2 garlic cloves
- 1 tablespoon olive oil
- 2 teaspoons chili powder
- 2 teaspoons salt
- 2 teaspoons sugar
Recipe
- 1 soak beans in a bowl full of plenty of water overnight.
- 2 drain and rinse beans and put into a large pot of boiling water, reduce heat, cover, and simmer for about 2 hours or until done. add water as needed--you cannot add too much water!
- 3 dice the onion, tomato, pepper, and garlic.
- 4 add garlic, onions, salt, and oil to a fry pan over medium heat. saute for about 5 minutes.
- 5 add other vegetables and sugar and raise heat to medium-high, saute for another 5 minutes. saute longer if you want mushier veggies (some kids will prefer this).
- 6 add beans and chili powder and cook until heated through, then reduce heat to low, cover, and let it sit for about 5 minutes.
- 7 serve hot over corn chips. put some fresh cilantro on top if you have it!
