Barley Pilaf With Beans & Broccoli

Ingredients
- Servings: 4
- 2 tablespoons extra virgin olive oil
- 1/2 cup chopped onion
- 1 1/2 cups vegetable broth
- 3/4 cup quick-cooking pearl barley
- salt
- 2 cups small broccoli florets
- 1 (16 ounce) can beans
Recipe
- 1 cook onions in oil until soft.
- 2 add broth and barley and bring to a boil.
- 3 add salt, cover, and simmer on low 5 minutes.
- 4 add broccoli, cover and simmer until brocooli is tender, about 5 more minutes.
- 5 stir in beans and heat until hot.
