Barley Pilaf With Beans & Broccoli

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup chopped onion
  • 1 1/2 cups vegetable broth
  • 3/4 cup quick-cooking pearl barley
  • salt
  • 2 cups small broccoli florets
  • 1 (16 ounce) can beans

Recipe

  • 1 cook onions in oil until soft.
  • 2 add broth and barley and bring to a boil.
  • 3 add salt, cover, and simmer on low 5 minutes.
  • 4 add broccoli, cover and simmer until brocooli is tender, about 5 more minutes.
  • 5 stir in beans and heat until hot.
