Chicken & Dressing (once A Month Cooking)

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 16
  • 4 cups cooked chicken, diced
  • 12 -16 tablespoons butter
  • 1 medium onion, minced
  • 1 cup celery, diced
  • 4 eggs, beaten
  • 3 cups milk
  • 18 -20 slices whole wheat bread, cubed
  • 2 -3 cups chicken broth
  • salt and pepper

Recipe

  • 1 melt butter in large pot.
  • 2 sauté onion and celery.
  • 3 in large, separate bowl, pour eggs and milk over bread cubes and toss until completely moistened.
  • 4 add this to celery and onion and fry until lightly browned.
  • 5 add chicken.
  • 6 freeze in ziploc bags.
  • 7 freeze broth in glass jars, plastic containers, or ziploc bags.
  • 8 to serve, thaw.
  • 9 pour mixture into large, heavy pot.
  • 10 pour half of broth over top.
  • 11 heat over medium heat until hot all the way through, adding more of the broth as mixture becomes dry.
