Ingredients
- 2 slices whole wheat bread (to keep carbs down)
- cottage cheese
- 6 slices zucchini
- 6 slices eggplants
- 6 slices summer squash
- 10 g roasted chopped onions
- oregano
- olive oil
Recipe
- 1 grill zucchini, eggplant and squash.
- 2 season the slices l-i-g-h-t-l-y with oregano and olive oil.
- 3 spread the bread with the cottage cheese - as much as you like.
- 4 layer the slices of zucchini, eggplant and squash on the slices of bread.
- 5 do not put the slices of bread together.
- 6 sprinkle onion on top of each slice.
- 7 dig in !
