Creamy Topless Sandwich

Total Time: 7 mins Preparation Time: 2 mins Cook Time: 5 mins

Ingredients

  • 2 slices whole wheat bread (to keep carbs down)
  • cottage cheese
  • 6 slices zucchini
  • 6 slices eggplants
  • 6 slices summer squash
  • 10 g roasted chopped onions
  • oregano
  • olive oil

Recipe

  • 1 grill zucchini, eggplant and squash.
  • 2 season the slices l-i-g-h-t-l-y with oregano and olive oil.
  • 3 spread the bread with the cottage cheese - as much as you like.
  • 4 layer the slices of zucchini, eggplant and squash on the slices of bread.
  • 5 do not put the slices of bread together.
  • 6 sprinkle onion on top of each slice.
  • 7 dig in !
