Detox Carrot, Orange And Ginger Soup

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 3
  • 8 carrots
  • 1/2 large onion
  • 2 garlic cloves
  • 3 oranges
  • 2 inches bulb gingerroot
  • 1 1/2 cups chicken broth or 1 1/2 cups vegetable broth
  • olive oil
  • nutmeg (optional)

Recipe

  • 1 in a medium pot, fry onion, garlic, and ginger in a dash of olive oil until clear.
  • 2 add carrots and sweat for 8-10 minutes.
  • 3 add stock and bring to a boil.
  • 4 simmer until carrots become cooked and tender.
  • 5 add in some orange zest and squeeze in all of the juices.
  • 6 blend in blender until smooth.
  • 7 serve hot or cold.
  • 8 enjoy!
  • 9 for vegan, use vegetable broth!
