Devil's Food Chocolate Chip Muffins

Total Time: 52 mins Preparation Time: 30 mins Cook Time: 22 mins

Ingredients

  • 2 cups unbleached all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1/2-3/4 cup sugar
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 1/3 cups milk
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup semisweet mini chocolate chips

Recipe

  • 1 coat 12 muffin cups with nonstick cooking spray.
  • 2 in a mixing bowl, add the flour, cocoa powder,sugar, baking soda, and salt; stir to combine.
  • 3 in another bowl, add the milk, oil, eggs, and vanilla; whisk until blended.
  • 4 add the liquid ingredients and 1/2 cup chocolate chips to the dry ingredients.
  • 5 stir just until dry ingredients are moistened; be careful not to overmix.
  • 6 pour batter evenly into muffin cups.
  • 7 sprinkle remaining chocolate chips evenly over muffin batter.
  • 8 bake at 400 degrees for 20-22 minutes or until pick comes out clean.
  • 9 place pan on a wire rack to cool for a few minutes before removing muffins from pan.
