Devil's Food Chocolate Chip Muffins

Ingredients
- 2 cups unbleached all-purpose flour
- 2/3 cup unsweetened cocoa powder
- 1/2-3/4 cup sugar
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 1/3 cups milk
- 1/3 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup semisweet mini chocolate chips
Recipe
- 1 coat 12 muffin cups with nonstick cooking spray.
- 2 in a mixing bowl, add the flour, cocoa powder,sugar, baking soda, and salt; stir to combine.
- 3 in another bowl, add the milk, oil, eggs, and vanilla; whisk until blended.
- 4 add the liquid ingredients and 1/2 cup chocolate chips to the dry ingredients.
- 5 stir just until dry ingredients are moistened; be careful not to overmix.
- 6 pour batter evenly into muffin cups.
- 7 sprinkle remaining chocolate chips evenly over muffin batter.
- 8 bake at 400 degrees for 20-22 minutes or until pick comes out clean.
- 9 place pan on a wire rack to cool for a few minutes before removing muffins from pan.
