Cannellini Bean Dip

Ingredients

- 2 tablespoons olive oil
- 1/2 cup red onion, finely chopped
- 2 teaspoons minced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 (15 ounce) can cannellini beans, drained and rinsed
- 1 teaspoon chili powder
- 1/4 cup water
- 1/4 cup fresh cilantro or 1/4 cup parsley, finely chopped
Recipe
- 1 in skillet, heat oil. add red onion and garlic and sauté. season with salt and pepper.
- 2 add onion mixture to food processor. add remaining ingredients, except cilantro or parsley, pulse until slightly chunky.
- 3 stir in cilantro or parsley. serve with vegetables.
