Cannellini Bean Dip

Ingredients

  • Servings: 7
  • 2 tablespoons olive oil
  • 1/2 cup red onion, finely chopped
  • 2 teaspoons minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1/4 cup water
  • 1/4 cup fresh cilantro or 1/4 cup parsley, finely chopped

Recipe

  • 1 in skillet, heat oil. add red onion and garlic and sauté. season with salt and pepper.
  • 2 add onion mixture to food processor. add remaining ingredients, except cilantro or parsley, pulse until slightly chunky.
  • 3 stir in cilantro or parsley. serve with vegetables.
