Cheat's Chocolate Eclairs

Ingredients
- 250 ml double cream
- 1 teaspoon vanilla
- 1 tablespoon icing sugar, sifted
- 12 sponge finger biscuits, halved lengthways
- 125 g dark chocolate, melted
- 1/4 teaspoon vegetable oil
Recipe
- 1 whisk cream, vanilla and icing sugar together in bowl until thick.
- 2 place the bases of biscuits on a wire rack.
- 3 spoon on to them the cream mixture.
- 4 top with remaining biscuits.
- 5 mix together the melted chocolate and oil.
- 6 spread this mixture over the tops of the biscuits.
- 7 serve within the hour or they will go soft.
