Cheat's Chocolate Eclairs

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 250 ml double cream
  • 1 teaspoon vanilla
  • 1 tablespoon icing sugar, sifted
  • 12 sponge finger biscuits, halved lengthways
  • 125 g dark chocolate, melted
  • 1/4 teaspoon vegetable oil

Recipe

  • 1 whisk cream, vanilla and icing sugar together in bowl until thick.
  • 2 place the bases of biscuits on a wire rack.
  • 3 spoon on to them the cream mixture.
  • 4 top with remaining biscuits.
  • 5 mix together the melted chocolate and oil.
  • 6 spread this mixture over the tops of the biscuits.
  • 7 serve within the hour or they will go soft.
