Creamy Spaghetti Squash

Total Time: 55 mins Preparation Time: 5 mins Cook Time: 50 mins

Ingredients

  • 1 large spaghetti squash
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 2 large shallots
  • 4 garlic cloves
  • 1/4 cup heavy cream
  • 1/2 cup parmesan cheese
  • 1 lemon
  • salt and pepper

Recipe

  • 1 split squash in half length wise, remove seeds and guts.
  • 2 cover with oil, salt and pepper.
  • 3 cook cut side down on a baking sheet for 40-45min at 375 degrees until the outside is soft and the inside is fork tender.
  • 4 remove squash strands by scraping the insides with a fork.
  • 5 start sauce with 1 tbs olive oil in a pan and add shallots and garlic.
  • 6 cook until soft and translucent about 5 minutes.
  • 7 add squash and heavy cream, cheese and lemon.
  • 8 add salt and pepper to taste.
  • 9 let cook on low for 3-5minutes and enjoy!
