Desert Sour Cream Potatoes

- 4 russet potatoes, peeled or 4 russet potatoes, left with skins on for a more rustic look
- 4 tablespoons butter, melted
- 1/2 cup grated cheddar cheese
- 1/2 cup monterey jack cheese
- 2 tablespoons grated onions
- 1 cup sour cream
- salt
Recipe
- 1 parboil potatoes until a fork can pierce through the potato easily.
- 2 let cool to touch.

- 4 grate potatoes and then add remaining ingredients and mix.
