Cranberry Apple Nut Muffins

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 2 cups apples, peeled and shredded
  • 1 1/3 cups sugar
  • 1 cup cranberries, chopped (fresh or frozen and thawefd)
  • 1 cup carrot, shredded
  • 1 cup nuts, chopped
  • 2 eggs, lightly beaten
  • 1/2 cup vegetable oil
  • 2 1/2 cups flour
  • 3 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground coriander (optional)
  • 1/2 teaspoon salt

Recipe

  • 1 preheat oven to 375 degrees f. positioning rack in oven center. line 18 muffin cups with paper liners.
  • 2 in a bowl, combine apples and sugar; let stand for 10 minutes. add cranberries, carrots, nuts, eggs and oil; mix well.
  • 3 combine the flour, baking power, baking soda, cinnamon, coriander if used, and salt. whisk to combine, then stir into apple mixture just until moistened. fill paper lined muffin cups two-thirds full.
  • 4 bake in preheated oven for 25-30 minutes or until a toothpick comes out clean. cool for 5 minutes before removing from pans to wire racks.
