Deviled Tofu Kebabs

Ingredients

- 8 shallots or 8 button onions
- 8 small new potatoes
- 2 tablespoons tomato puree
- 2 tablespoons light soy sauce
- 1 tablespoon sunflower oil
- 1 tablespoon clear honey
- 1 tablespoon coarse grain mustard
- 300 g smoked tofu, cubed
- 1 courgette, peeled and sliced
- 1 red pepper, de-seeded and diced
Recipe
- 1 put the shallots or button onions in a bowl, cover with boiling water and set aside for 5 minutes
- 2 cook the potatoes in a pan of boiling water for 7 minutes until tender. drain and pat dry.
- 3 put tomato puree, soy sauce, oil, honey, mustard and seasoning in a bowl, then mix well.
- 4 toss the tofu in the marinade.
- 5 set aside for at least 10 minutes.
- 6 heat the grill.
- 7 drain and peel shallots or onions, then cook in boiling water for 3 minutes
- 8 drain well.
- 9 thread the tofu, shallots, potatoes, courgette and pepper on to 8 x 20 cm skewers.
- 10 grill for 10 minutes, turning frequently and brushing with remaining marinade before serving.
