Asparagus Torta

Ingredients
- 2 lbs asparagus, cleaned and trimmed
- 6 eggs
- 1 tablespoon virgin olive oil
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup seasoned bread crumbs
- 2 tablespoons virgin olive oil
Recipe
- 1 preheat oven 375 degrees.
- 2 oil bottom and sides of 8x8x2 pan with 2 tbsp olive oil.
- 3 cook asparagus until tender & let cool.
- 4 cut asparagus into small pieces.
- 5 beat eggs with 1 tbsp olive oil, add asparagus, salt & pepper, mix well.
- 6 pour into prepared pan & drizzle a little olive oil on top.
- 7 bake approximately 45 minute.
- 8 should be nice & brown, cool & cut into squares to serve.
