Asparagus Torta

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 2 lbs asparagus, cleaned and trimmed
  • 6 eggs
  • 1 tablespoon virgin olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup seasoned bread crumbs
  • 2 tablespoons virgin olive oil

Recipe

  • 1 preheat oven 375 degrees.
  • 2 oil bottom and sides of 8x8x2 pan with 2 tbsp olive oil.
  • 3 cook asparagus until tender & let cool.
  • 4 cut asparagus into small pieces.
  • 5 beat eggs with 1 tbsp olive oil, add asparagus, salt & pepper, mix well.
  • 6 pour into prepared pan & drizzle a little olive oil on top.
  • 7 bake approximately 45 minute.
  • 8 should be nice & brown, cool & cut into squares to serve.
