Delicious Nutritious Salad

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • Servings: 1
  • 2 1/2 cups salad greens
  • 1/4 bell pepper
  • 1/4 cucumber
  • 1/4 tomato
  • 1/4 yellow squash
  • 1/4 zucchini
  • 10 water chestnuts
  • 2 ounces tofu
  • 1 ounce dried blueberries
  • 5 mushrooms
  • 1 ounce red onion

Recipe

  • 1 chop or slice veggies, mix everything together, add or subtract any other veggies you'd like, keep the tofu or sub with any other protein, good with feta cheese!
  • 2 use whatever dressing you'd like.
  • 3 easily doubled, tripled.
