Baked Lentil And Mushroom Stuffing

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 teaspoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 lb mushroom, quartered
  • 1 cup lentils
  • 1 cup chicken broth
  • 1/2 teaspoon dried sage
  • 1/3 cup chopped walnuts
  • salt and pepper

Recipe

  • 1 preheat the oven to 350.
  • 2 in a small ovenproof saucepan, heat the oil over moderate heat. add the onion and garlic, and sauté for 5 minutes or until the onion is soft.
  • 3 add the mushrooms and sauté for 5 minutes or until beginning to soften.
  • 4 add the lentils, broth, ½ cup water, sage and salt and pepper to taste.
  • 5 bring to a boil. cover, transfer to the oven, and bake for 30 minutes or until the lentils are tender.
  • 6 remove from the oven and stir in the walnuts.
