Baked Lentil And Mushroom Stuffing

Ingredients

- 2 teaspoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 lb mushroom, quartered
- 1 cup lentils
- 1 cup chicken broth
- 1/2 teaspoon dried sage
- 1/3 cup chopped walnuts
- salt and pepper
Recipe
- 1 preheat the oven to 350.
- 2 in a small ovenproof saucepan, heat the oil over moderate heat. add the onion and garlic, and sauté for 5 minutes or until the onion is soft.
- 3 add the mushrooms and sauté for 5 minutes or until beginning to soften.
- 4 add the lentils, broth, ½ cup water, sage and salt and pepper to taste.
- 5 bring to a boil. cover, transfer to the oven, and bake for 30 minutes or until the lentils are tender.
- 6 remove from the oven and stir in the walnuts.
