Chicken Of The Islands

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 frying chicken, cut up into pieces
  • 1/3 cup soy sauce
  • 1 lemon, juice of
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon salt (opt. as soy sauce is salty)
  • 1 teaspoon ginger
  • flour, for dipping chicken in
  • 1/4 cup vegetable oil
  • 1 large chopped onion
  • 1 cup boiling water
  • cooked rice

Recipe

  • 1 put chicken pieces into a deep bowl.
  • 2 mix together soy sauce, lemon juice and seasonings. pour over chicken and let stand for at least 1/2 hour in the refrigerator, turning occasionally to marinate.
  • 3 lift chicken from liquid and reserve.
  • 4 roll chicken in flour and brown in hot oil.
  • 5 put chicken, onions and water into casserole dish.
  • 6 pour reserved liquid over chicken.
  • 7 cover and bake in 350 degree oven for 45 minutes or until chicken is tender.
  • 8 serve over hot rice.
