Corn Souffle

Ingredients

  • Servings: 6
  • 1 tablespoon butter
  • 1/4 cup parmesan cheese
  • 6 slices bacon
  • 10 ounces corn, canned, drained
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup milk
  • 1 cup cheddar cheese, shredded
  • 4 eggs, separated
  • 1/4 teaspoon cream of tartar

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 butter 1 1/2 quart souffle dish (or oven baking dish) with 1 tablespoon butter. sprinkle with parmesan cheese to coat sides and bottom.
  • 3 cook bacon until crisp, then crumble.
  • 4 melt 1/4 cup butter in saucepan.
  • 5 blend in flour, salt and pepper.
  • 6 gradually stir in milk. bring to a boil and cook 1 minute, stirring constantly.
  • 7 stir in cheese, and remove from heat.
  • 8 stir in egg yolks, 1 at a time, until smooth.
  • 9 stir in bacon and corn.
  • 10 beat egg whites with cream of tartar in large bowl until peaks form.
  • 11 stir 1/4 of whites into mixture to lighten.
  • 12 gently fold into remaining whites.
  • 13 pour into the prepared dish.
  • 14 bake at 350 degrees for 40 to 45 minutes.
