Corn Souffle

Ingredients

- 1 tablespoon butter
- 1/4 cup parmesan cheese
- 6 slices bacon
- 10 ounces corn, canned, drained
- 1/4 cup butter
- 1/4 cup flour
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup milk
- 1 cup cheddar cheese, shredded
- 4 eggs, separated
- 1/4 teaspoon cream of tartar
Recipe
- 1 preheat oven to 350 degrees.
- 2 butter 1 1/2 quart souffle dish (or oven baking dish) with 1 tablespoon butter. sprinkle with parmesan cheese to coat sides and bottom.
- 3 cook bacon until crisp, then crumble.
- 4 melt 1/4 cup butter in saucepan.
- 5 blend in flour, salt and pepper.
- 6 gradually stir in milk. bring to a boil and cook 1 minute, stirring constantly.
- 7 stir in cheese, and remove from heat.
- 8 stir in egg yolks, 1 at a time, until smooth.
- 9 stir in bacon and corn.
- 10 beat egg whites with cream of tartar in large bowl until peaks form.
- 11 stir 1/4 of whites into mixture to lighten.
- 12 gently fold into remaining whites.
- 13 pour into the prepared dish.
- 14 bake at 350 degrees for 40 to 45 minutes.
