Cornbread Casserole With Caramelized Onions

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 large onion, chopped
  • 1 egg
  • 1 (15 ounce) can cream-style corn
  • 1 (8 1/2 ounce) box corn muffin mix
  • 2 tablespoons butter
  • 2 tablespoons water
  • 1/4 cup dry milk
  • 1/2 cup cheddar cheese, shredded

Recipe

  • 1 preheat oven to 425°f.
  • 2 in a medium skillet, saute onions in butter over medium-high heat until golden,about 10 minutes, set aside.
  • 3 in a medium bowl, mix egg and water.
  • 4 stir in corn.
  • 5 stir in dry milk and muffin mix until blended.
  • 6 stir in onions.
  • 7 spread in mix into a greased 8x8 inch baking dish.
  • 8 sprinkle with cheese.
  • 9 bake for 25-30 minutes or until puffed and golden.
  • 10 let stand 10 minutes and cut into squares.
