Dawns Leek And Potato Soup

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 3 leeks
  • 1 lb chopped potato
  • 1 onion
  • 1 pint vegetable stock
  • 1/2 cup water
  • seasoning
  • 3 tablespoons cream (optional)

Recipe

  • 1 clean and chop the leeks into 1/4 inch pieces.
  • 2 place chopped onions and leeks into a large pan with water and and steam for 5 minutes.
  • 3 add the stock and chopped potato bring to boil and then simmer for 1/2 hour.
  • 4 season to taste.
  • 5 can be served liquidised or chunky
  • 6 add cream if using it , and serve.
