Blue Diamond Banana Nut Bread With Almonds

Ingredients
- 2 cups ripe bananas, mashed
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 teaspoon vanilla
- 1 egg (optional)
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups almonds (i use pecan or walnut mixed)
Recipe
- 1 preheat oven to 350.
- 2 grease and flour 2 small loaf pans or one large (meatloaf size).
- 3 beat first 6 ingredients together. add in flour, salt, baking soda and baking powder and mix well.
- 4 fold in almonds or other nuts if using-reserve some for top of bread if desired.
- 5 bake at 350 until toothpick poked into center comes out clean. appx 50 minute.
