Carrot And Poppy Seed Bake

Ingredients
- 1 1/2 lbs carrots, cut into thin strips
- 1 leek, sliced
- 1 1/4 cups fresh orange juice
- 2 tablespoons clear honey
- 1 garlic clove, crushed
- 1 teaspoon mixed spice
- 2 teaspoons thyme, chopped
- 1 tablespoon poppy seed
- salt
- pepper
- 2 teaspoons orange zest
Recipe
- 1 cook the carrots and leek in a saucepan of boiling salted water for 5-6 minutes. drain well and transfer to a shallow baking dish.
- 2 mix together the orange juice, honey, garlic, mixed spice and thyme and pour the mixture over the vegetables. add salt and pepper to taste.
- 3 cover the baking dish and bake at 350f for 30 minutes or until vegetables are tender.
- 4 remove the lid and sprinkle with poppy seeds. sprinkle with orange zest.
