Carrot Cornbread

Ingredients
- 1 cup cornmeal
- 1 cup finely grated carrot
- 2 tablespoons honey
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 3/4 cup boiling water
- 2 eggs, separated
Recipe
- 1 mix cornmeal, carrots, oil, honey, and salt. stir in boiling water.
- 2 stir egg yolks into cornmeal mixture. stiffly beat the eggs whites.
- 3 fold the stiffly beaten egg whites into cornmeal mixture.
- 4 pour into a greased loaf pan.
- 5 bake at 400º for 30 minutes.
