Carrot Cornbread

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • 1 cup cornmeal
  • 1 cup finely grated carrot
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 3/4 cup boiling water
  • 2 eggs, separated

Recipe

  • 1 mix cornmeal, carrots, oil, honey, and salt. stir in boiling water.
  • 2 stir egg yolks into cornmeal mixture. stiffly beat the eggs whites.
  • 3 fold the stiffly beaten egg whites into cornmeal mixture.
  • 4 pour into a greased loaf pan.
  • 5 bake at 400º for 30 minutes.
