Corn Salad With Sliced Radish

Ingredients
- 3 cups corn kernels
- 1/2 cup cherry tomatoes, halved
- 1/2 cup roasted red pepper, thinly sliced
- 2 celery ribs, sliced
- 5 radishes, thinly sliced
- 1/2 cup fresh cilantro, roughly chopped
- 3 tablespoons lime juice
- 1 1/2 tablespoons olive oil
- 1 teaspoon agave syrup
- 3/4 teaspoon kosher salt
- 3/4 teaspoon fresh ground pepper
Recipe
- 1 combine all vegetables and herbs in a large bowl.
- 2 in a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- 3 toss vegetables in lime dressing and let sit for an hour in the fridge or even overnight.
