Corn Salad With Sliced Radish

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • 3 cups corn kernels
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup roasted red pepper, thinly sliced
  • 2 celery ribs, sliced
  • 5 radishes, thinly sliced
  • 1/2 cup fresh cilantro, roughly chopped
  • 3 tablespoons lime juice
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon agave syrup
  • 3/4 teaspoon kosher salt
  • 3/4 teaspoon fresh ground pepper

Recipe

  • 1 combine all vegetables and herbs in a large bowl.
  • 2 in a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  • 3 toss vegetables in lime dressing and let sit for an hour in the fridge or even overnight.
