Chicken Braised In Red Wine

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 split chicken breasts (on the bone)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup thinly sliced onion
  • 1 tablespoon fresh rosemary, chopped
  • 1 lb fresh tomato, chopped in 1 inch pieces
  • 3/4 cup red wine

Recipe

  • 1 sprinkle the salt and pepper over the chicken breasts.
  • 2 heat a large deep nonstick skillet over medium high.
  • 3 add the chicken, skin-side down, and cook 3 to 4 minutes, or until golden brown.
  • 4 turn the chicken and add the red and green peppers, onion, rosemary and tomatoes to the pan.
  • 5 cook, stirring to spread the vegetables out in the pan, for 1 to 2 minutes.
  • 6 pour the wine into the skillet, immediately reduce the heat and cover the pan.
  • 7 cook at a low simmer for 20 minutes, or until the chicken is cooked through.
