Chocolate Buttermilk Muffins

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 2 2/3 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1/2 cup baking cocoa
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup buttermilk
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips (optional)

Recipe

  • 1 preheat oven to 425 degrees.
  • 2 in large bowl, combine flour, sugar, cocoa, baking soda, and salt with a whisk.
  • 3 in another bowl, beat eggs, buttermilk, water, oil and vanilla.
  • 4 combine wet ingredients with dry until barely moistened (batter will be thick).
  • 5 fold in chocolate chips.
  • 6 fill (not 2/3 full. almost completely) greased or paper lined muffin cups with batter.
  • 7 bake at 425 for 8 minute.
  • 8 lower oven temp to 325 and bake for additional 12-17 minute or until tops are firm and muffins are done.
  • 9 cool on wire racks immediately.
