Chocolate Buttermilk Muffins

Ingredients
- 2 2/3 cups all-purpose flour
- 1 1/2 cups sugar
- 1/2 cup baking cocoa
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 3 eggs
- 1 cup buttermilk
- 1/2 cup water
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 1/2 cups semi-sweet chocolate chips (optional)
Recipe
- 1 preheat oven to 425 degrees.
- 2 in large bowl, combine flour, sugar, cocoa, baking soda, and salt with a whisk.
- 3 in another bowl, beat eggs, buttermilk, water, oil and vanilla.
- 4 combine wet ingredients with dry until barely moistened (batter will be thick).
- 5 fold in chocolate chips.
- 6 fill (not 2/3 full. almost completely) greased or paper lined muffin cups with batter.
- 7 bake at 425 for 8 minute.
- 8 lower oven temp to 325 and bake for additional 12-17 minute or until tops are firm and muffins are done.
- 9 cool on wire racks immediately.
