Cornbread Stuffing W/sausage

Total Time: 1 hr 15 mins Preparation Time: 10 mins Cook Time: 1 hr 5 mins

Ingredients

  • 1 lb jimmy dean sausage (we like hot)
  • 4 tablespoons butter or 4 tablespoons margarine
  • 3 -4 celery ribs, diced
  • 1 large onion, finely diced
  • 1 (14 1/2 ounce) can chicken broth
  • 1 teaspoon black pepper (to taste)
  • 1 (16 ounce) package cornbread stuffing mix
  • 3/4 cup water
  • salt

Recipe

  • 1 heat frying pan over medium high heat. add sausage and cook until browned, stirring and breaking up sausage. remove sausage from pan with slotted spoon and pour off all but 2 tblsp. drippings. add butter, celery and onion; cook, stirring occasionally until vegetables are browned. stir in chicken broth, pepper, salt and water; heat to boiling, stirring to loosen browned bits from pan. in a large bowl, put stuffing mix and cooked vegetables. gently mix together. spray 9 x 13-inch casserole dish with cooking spray. spoon stuffing in dish and cover with foil bake at 325* for about 45 minutes or until stuffing is heated through.
