Brian Boitano's Garlicky Bean Artichoke Dip

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1/3 cup olive oil
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 (15 ounce) can artichokes, hearts drained
  • 1 lemon, juice of
  • 2 -3 garlic cloves
  • salt and pepper

Recipe

  • 1 place garlic cloves in bowl of food processor.
  • 2 pulse in short spurts until garlic is minced.
  • 3 place cannelini beans, artichoke hearts, lemon juice and salt and pepper in bowl.
  • 4 process until all ingredients are well mixed.
  • 5 pour olive oil through food chute and process until mixture is creamy.
  • 6 refrigerate for at least 1 hour.
  • 7 serve with pita chips or fresh vegetables.
