Coconut Curried Chicken

Ingredients

- 2 lbs boneless skinless chicken, cut into 1/2 inch pieces
- salt and pepper
- 1 1/2 tablespoons vegetable oil
- 2 tablespoons curry powder
- 1 onion, thinly sliced
- 2 garlic cloves, crushed
- 1 (14 ounce) can coconut milk
- 1 (10 ounce) can tomatoes and green chilies
- 1 (8 ounce) can tomato sauce
- 3 tablespoons sugar
Recipe
- 1 season chicken with salt and pepper.
- 2 heat oil and curry powder over medium high heat for about 2 minutes.
- 3 stir in garlic and onion and cook 1 more minute.
- 4 add chicken, tossing lightly to coat with curry oil.
- 5 reduce heat and cook til chicken is done, about 10 minutes.
- 6 add all other ingredients and stir to combine.
- 7 cover and simmer on low for 30 to 40 minutes stirring occasionally, until desired consistency is reached.
- 8 serve over rice.
