Crab Meat Alma

Ingredients

  • Servings: 8
  • 1/2 cup butter or margarine
  • 1 bunch green onion, chopped
  • 1/2 cup parsley, finely chopped
  • 1/2 cup celery, finely chopped
  • 1 can mushroom, drained (small)
  • 3 tablespoons flour
  • 2 cups light cream
  • 2 cups swiss cheese, grated
  • 1/2 cup sherry wine or 1/2 cup vermouth, dry
  • cayenne pepper
  • salt
  • 1 lb crab meat or 1 lb shrimp

Recipe

  • 1 melt butter in heavy saucepot.
  • 2 saute vegetables until soft.
  • 3 blend in flour and add cream.
  • 4 heat until thickened.
  • 5 add cheese and heat until it has melted.
  • 6 add wine, cayenne pepper, and salt.
  • 7 fold in crab meat or shrimp.
  • 8 heat gently for 8 to 10 minutes
  • 9 serve with french bread or in patty shells
